Tis the season for strawberries. All the markets are usually having a two for one sale right now, and I thought I’d share my go to way to enhance their flavor and serve up something unique at the same time.
Macerated balsamic black pepper strawberries with honey whipped cream
Strawberries, balsamic and black pepper are a common element in Italian kitchens and cookbooks for a good reason–it is really tasty! Adding honey whipped cream is a cool touch to add a subtle sweetness.
Before preparing dinner, hull and slice two pints of dead ripe fresh strawberries and add to a bowl. Add 2 tablespoons of balsamic vinegar, and a healthy two teaspoons of ground black pepper and a stark tablespoon of sugar to taste. Stir, and set aside for 30 to 120 minutes.
When ready to serve, whip 1/2 pint of cream with two tablespoons of honey. Spoon berries into bowls and top with cream. A sprig of mint makes it fancy.
